Spicy Balsamic, Tomato & Cottage Cheese

 


Ingredients (serves 1)
  • 1 tomato
  • 1/2 cup low-fat cottage cheese
  • 1 clove garlic (the garlic is what makes it spicy)
  • 1 to 2 TB balsamic vinegar
  • salt/pepper to taste (I prefer fine grain sea salt and fresh cracked pepper)
  1. Peel the garlic clove, finely chop, set aside
  2. Cut your tomato in wedges (the presentation of the wedge looks great on the plate), remove any stems
  3. Place tomato wedges in a shallow bowl in a fan pattern on one half of the dish
  4. Spoon-in your cottage cheese on the other side of the dish
  5. Sprinkle the dish with the 1 to 2 TB balsamic vinegar
  6. Sprinkle with salt and pepper
  7. Sprinkle the garlic over the top

The garlic is very healthy in raw form, especially after crushing it and allowing it to sit for a few minutes before eating.  The raw garlic makes this a spicy dish!
