Coconut Oil Popcorn

Popcorn is such a great snack, especially for the chip-lovers (like me).  It's a great way to get your crunchy/salty fix, without all of the unhealthy additives, not to mention it's a low calorie, whole grain, without preservatives, or added sugars.  My husband and I prefer to make our own and bring it in baggies in my purse to the movies; I know, it's cheating, but with movies costs today, and the health-destroying ingredients in the movie popcorn, it's the only way to go.  Plus, we just like how it tastes better.  Below are your ingredients and instructions for guilt-free snacking!

Ingredients/Supplies (makes about 7 cups popped)
- 2 qt saucepan w/lid (at least, but no bigger than a 4 qt for these amounts)
- 1 TB coconut oil
- 1/4 - 1/3 cup unpopped popcorn kernels
- 2 tsp sea salt (more, if you like)
- 2 tsp nutritional yeast (so yummy, and healthy, too: again, more, if you like)
- Large bowl for mixing/serving (you can divide into smaller bowls for more people
)

Instructions

Step 1: Gather your ingredients



Step 2: Place your 2 qt saucepan on the stove, turn your stove burner to med-high heat, add the 1TB coconut oil to your saucepan, allowing it to melt (it does not need to melt completely before the next step)



Step3: Add your popcorn kernels to the melting coconut oil, and place the lid on top



Step 4: Let the popcorn cook/pop at med-high heat until the 'pop' sounds slow, about 1-2 seconds apart.  Don't lift the lid until it's done, and don't leave it on too long, or the popped corn will start to burn.



Step 5: When popping is 1-2 seconds apart, turn off stove burner, remove lid, and immediately pour into the large bowl.  Sprinkle with your salt, and nutritional yeast (I like to sprinkle with half of the salt and nutritional yeast, stir, then sprinkle the remaining to get even coverage).  Serve!

TIP: If you don't finish all of it, it stores well in a sealed container for a few days, and with about 15-30 seconds in the microwave in a microwave-safe dish, it will have warmth, and taste fresh like you just made it.  No waste!
