Kylie's Mystery Egg Puffs

These are called 'mystery' puffs because you can make different combinations to suit your desire!  You never know what could be in these puffs...

Base Ingredients
- 2 cups whole wheat bread (chopped or food processed into small chunks, no bigger than the size of a die and smaller pieces are fine; this is a great way to use those end pieces or bread that needs to be used quickly, and you only need enough to fill about an inch in the bottom of each tin)
-7 eggs
-1 1/2 cups milk

Makes 12 puffs the size of muffins

  1. Preheat oven to 375 degrees, with rack in middle of oven
  2. Grease one muffin tin, all twelve spaces (you don't want them to stick)
  3. Mix eggs and milk together with a whisk
  4. Layer in this order: bread on the bottom of each tin, then add your 'variations' in (eg additional ingredients from Smoked Salmon, Cheesy Artichoke, or Cinco de Mayo), pour base ingredient mixture on top of each (eggs/milk mixture)
  5. Make sure each tin is filled to the top, but not spilling over (if you find you need more to fill all of them to the top, mix one more egg and a bit of milk, and add more as needed)
  6. Put into preheated oven for 30 minutes, remove from oven
  7. Remove each puff with a spoon to help lift them out, and serve warm - enjoy!
Now come the variations in the recipes...

Smoked Salmon Caper Puff
-base ingredients
-1 to 1 1/2 cups chopped smoked salmon
-2 TB drained capers
-3/4 cup shredded parmesan cheese (divided: 1/2 cup will be in the layering, but reserve a 1/4 cup to sprinkle on-top before putting in the oven)
-8-10 blanched asparagus spears (you don't want them overcooked, still firm), cut into 2 inch sections (they have to fit into the tins)
-3 TB diced pancetta (you can sprinkle this on the top after pouring in your egg mixture - it looks great)

Cheesy Artichoke Puff
-base ingredients
-2 cups drained, chopped artichoke hearts (small chunks about 1/4 to 1/2 in size)
-1 cup white sharp cheddar cheese, shredded (buy a block and shred yourself)
-2 TB fresh chopped chives (for garnish on-top before putting in the oven)

Cinco de Mayo Puff
-base ingredients
Mix these next 6 ingredients together in a bowl, then add on-top of the bread...
-3/4 cup shredded monterey jack cheese (buy a block and shred yourself)
-1/2 to 3/4 cup diced fresh tomatoes (cut in half, remove seeds, and watery center first - you don't want them too watery, you just need the flesh)
-1/2 to 3/4 cup diced fresh avocado (not guacamole, it will be too soft)
-1/4 cup diced onion (any kind will do)
-3 TB chopped fresh cilantro (layer with other items, don't use as top garnish)
-1 TB green tobasco hot sauce (I suggest going with the green, it's a little less heat)
-fresh juice of one lime wedge
